Hey everyone. After about 3 hours of trying to figure it out here it is. I renamed my applications.
Here is how you do it.
1) Download this file. http://www.modmyifone.com/forums/vbseo.php?vbseourl=downloads.php&do=file&id=146
2) The file inside is just a regular XML http://encyclopedia.thefreedictionary.com/XML . Modify it to your likings the same way as you would modify DisplayOrder.plist.
3) Upload to /System/Library/CoreServices/SpringBoard.app/English.lproj/
4) Reset your phone.
