Do not think about updating your iPhone 3G to firmware 2.2.1 direct from iTunes, this was done in MuscleNerd (member of the Dev-Team), in the video below it shows a 3G iPhone with the new firmware 2.2.1, and with jailbreack unlocked.
Yesterday advise you not to update your iPhone to firmware 2.2.1, because it will update the baseband and you will not comseguir use Yellowsn0w. What I recommend is waiting for an update of the PwnageTool and QuickPwn for you to update and do the jailbreak without headaches.
